UOA MaxiThiol is a novel yeast strain developed by the Wine Science Group at the University of Auckland, New Zealand. The strain is exclusively licensed to AB Mauri and will be available for the 2013 vintage. UOA MaxiThiol is not only a high thiol producing strain but is also POF negative, making it ideal for white wine production and in particular Sauvignon Blanc. It contributes significant aromas of ‘passionfruit’ and ‘tropical fruit’ to the finished wine.
