Rapidase® Glucalees is an enzymatic formulation which has been specifically developed to optimise filtration and clarification, particularly in wines from Botrytis-infected grapes.
Glucalees is an easy-to-use, micro-granulated product. Simply dilute in wine immediately prior to use and add after fermentation.
In addition to its pectolytic activities, this enzyme formulation has glucanase activity which breaks down the problematic glucans produced by Botrytis cinerea, and so decreases the viscosity of the wine. This allows for improved filter yields, reduced use of filter aids, lower wine losses, and makes it easier and less expensive to filter.
