An effective solution against brettanomyces in wine

Brettanomyces or Dekkera is a threat to the quality of wines.

These yeasts are capable of developing in difficult media at all stages of vinification, producing undesirable aromatic compounds such as volatile phenols which in turn give rise to the perception of undesirable ‘animal-like’  or phamaceutical notes (leather, stables, bandages or medicinal).

No Brett Inside is a new tool offered by Lallemand to effectively prevent Brettanomyces contamination.

A new and natural product to protect the quality of wines

Even at low population, Brettanomyces can produce these volatile pheonals at any moment, masking the wine’s bouqet and comprimising its varietal expression.

Current preventative measures such as optimised alcoholic and malolactic fermentations, lees managements and barrell hygiene are not always effective in the fight against Brettanomyces.

No Brett Inside is a natural polysaccharide extracted from Aspergillus niger fungus.

Its effectiveness at controlling the Brettanomyces population has been demonstrated for several years in multiple laboratory tests and industrial-scale trials.

Applied at the rate of 4 g/hL, No Brett Inside can reduce the Brettanomyces population from 3 x 105 cells/mL to 0 in 10 days of treatment.

No Brett Inside is an original and patented process developed by the company KitoZyme.

It is easy to use, biodegradable, non toxic and non allergenic.

No Brett Inside was approved by the Organisation Internationale de la Vigne et du Vin (OIV) in July 2009, by the European Union in December 2010 as a new practice in the oenological codex, and more recently by Food Standards Australia New Zealand (FSANZ) in January 2014 for the manufacture of wine, beer, cider, spirits and food grade ethanol.
